Bengali Ras Malai or Rosh malai for diwali / festive season



Today I am sharing recipe from rediff.com of my favorite sweet dish i.e.  Ras-Malai.  Ras Malai or Rosh malai is popular dessert from Bengal.
      
Ingredients
For the 'malai'
  • 500 ml litre milk
  • 2 tsp lemon Juice (add slowly till milk separates)
For the sugar syrup
  • 1 cup water
  • 1/2 cup sugar
For the ras/milk syrup
  • 500ml litre whole milk/full cream milk
  • 4 tbsp sugar
  • 1 tsp saffron (soak it in 1/4 cup of warm -- not hot -- milk and leave for 30 minutes)
  • Pistachio flakes to taste
  • 1 tsp kewra or rose water.
Method
For the 'Ras'
  • Heat milk in a pan.
  • Keep stirring while adding sugar.
  • Simmer on low flame for 15 minutes.
  • Add the kesar and the kewra to the milk once its warm (not while it's hot) and set aside.
For the 'Malai'
  • Boil the milk and add lime juice till paneer is separated.
  • Turn off the gas, off and the paneer for a minute.
  • Empty the paneer onto a plate, strain and wash it thoroughly.
  • Press it under something heavy for five minutes to get the whey out.
  • The paneer that you get will be crumbly.
  • This is the right kind of paneer to get good 'gullas'.
  • Add cornflour to it.
  • Beat till it becomes a soft dough and make small balls out of it.
  • In a pressure cooker, add water and sugar. Let it boil.
  • Put the paneer balls in and cover with the lid. Pressure cook till one whistle.
  • Let it cool.
  • Add the paneer balls to the milk mix.
  • Decorate with pistachio slivers.
  • Serve cold.

Kuttu ka Halwa for Navratri Festival



Today is first day of Navratri, wishing all my readers a Very Happy Navratri. I will be sharing a quick dish that you can enjoy during navratri.

Ingredients:
1/2 cup  Kuttu Atta
1/4 cup Singhara Atta
1 teaspoon green cardamom , crushed
1 1/2 cup sugar
1/2 cup clarified butter /Desi Ghee
1/4 cup chopped pistachios
4 cups water

Method-

  • Sieve both flour together .

  • Heat Ghee (clarified butter) in a wok , add sieved flour , mix well, and stir continuously for 2 to 3 minutes.

  • Add sugar and mix well.

  • Now add water and cook on low heat for 5-7 minutes till water evaporates.

  • Remove from heat

  • Serve hot, and sprinkle some chopped pistachios

Malpua recipe (Ajmer Rajasthan style)


Today I am sharing my favorite Rajasthani dessert recipe i.e. Malpua




  
Ingredients
Wheat Flour – 1 Cup
Curd – ½ Cup
Milk – ½ Cup
Sugar Powder – ¼ Cup
Fennel seeds (Saunf )  – 1 tablespoon
Salt – 1 Pinch
Baking Soda – ½ teaspoon
chopped Almonds / Pista – 1 tablespoon ( for garnishing )
Ghee / Vegetable oil for frying
For Syrup-
Sugar – ½ Cup

Water – 1 1/2  Cup

Method –
Take a large bowl, add all the ingredients in it. Then add about 1 ½ cup of slightly warm water in the bowl. Mix it well to make smooth batter. Keep the bowl aside for aprox 1 hrs.
To make syrup boil sugar and water. Keep aside
Take a kadai; place it over heat and heat ghee or oil in it. Now pour the batter of 1 tablespoon in the hot oil and fry it until it gets golden brown from both sides over medium heat.
Drain the malpua and place on paper towel to absorb the excess oil. Make more malpuas in the same way. Put in sugar syrup for 2 mins and take it out on plate. Garnish them with chopped Almonds / Pista and serve them hot.

Gulab Jamun Ice-Cream




This is very simple recipe and awesome in taste, you just need two ingredients. Gulab Jamuns are something we all Indians love as a dessert. They are liked in every season and served for any good reason.

  Ingredients:

  1. Gulab jamuns- 2
  2. Vanilla ice cream - 1 scoop
  3. Chopped Almonds, Pistachio - 1 teaspoon
  4. Cardamom powder- a pinch



Put two hot Gulab Jamuns in a serving cup, now put a scoop of Vanilla ice-cream over it. Garnish with Chopped Almonds, Pistachio and Cardamon Powder.
Serve before ice cream melts. Enjoyyy!!!
